味噌的主原料-大豆,內含類黃酮素一種與女性荷爾蒙相似的天然物質,也是很好的蛋白質來源,除此之外富含的好菌、鐵、磷、維他命E等營養。

酸女孩烹煮味噌,特地以減鹽製作,蛋白質含量更是市售常見味噌2倍之多,鈉含量僅三分之二,只需搭配不同食材並調整使用的頻率,利用味噌的強烈風味帶出食物的原味,就可以多元使用在炙烤、調醬、漬物上。

1. 小黃瓜刨成薄片,加入2小撮鹽,抓勻,靜置20分鐘殺青出水後,擠掉多餘的水。
2. 味噌與無糖優格及黃色系酸甜感水果醬混勻(果醬可選擇鳳梨、黃梅、百香果、蘋果等都很適合)
3. 將步驟1與2混合後放入乾淨的容器,置於冰箱至少2小時,即可食用。
